
Our perspective – thoughtfulness in every decision
For us, sustainability is about more than ingredients – it is a way of thinking, planning, and taking responsibility. We choose eco-labelled products, sort waste carefully, and use cleaning agents that are kind to both people and the environment. We cook everything from scratch, without unnecessary additives, because we believe that genuine flavours benefit both body and planet.
We place high demands on ourselves and our suppliers – sometimes to the point of being seen as a little demanding. But it is a challenge we carry with pride. Because we know that every conscious choice, big or small, is a step towards a more sustainable future.
We take responsibility at every stage – from what we cook to how we clean. By preparing our food from scratch and working with our own cleaning and dishwashing company, FairClean, we maintain full control over both flavour and sustainability. This allows us to genuinely reduce our environmental impact – through careful waste sorting, eco-labelled products, and thoughtful routines throughout the entire operation.
Sustainability and environmental policy
Through active and conscious choices, we aim to select environmentally certified products, services, and production methods wherever possible, in order to act in a climate-smart way. We are not afraid to set demands for our suppliers, even if it sometimes means being a bit demanding ourselves. We do this because we want to help drive progress towards a sustainable society.
We are proud to prepare as much food as possible from scratch, without unnecessary additives, as we believe it makes the food both tastier and healthier. For example, we make our own vegetarian halloumi burgers, cook our own stocks, and bake our own pastries.
By working with our subsidiary Fairclean, which handles dishwashing and cleaning, we have a great opportunity to reduce the environmental impact of our restaurant operations – for instance through careful waste sorting and the use of environmentally certified cleaning products.
A large proportion of our food and drink is organic – we purchase at least 20% organic and sustainable ingredients (EKO, MSC) – and we actively work to reduce food waste.
We sort our waste and avoid single-use items in daily service. For take-away and catering, only environmentally certified alternatives are used.
We limit water and energy consumption, use eco-labelled cleaning and dishwashing products, and train our staff in sustainability.

From plate to power – turning food waste into biogas
When we take care of our food waste, new energy is created. Through our collaboration with Biogasakademin and Stockholmsmässan, leftovers from our kitchens are transformed into biogas – a fossil-free fuel that powers cars, buses, and lorries. It’s a smart cycle where every peel and crumb gains a new life, and where our environmental efforts make a real difference – both locally and nationally.

United for a greener Stockholm
As proud members of the Climate Pact, we are part of a growing network of more than 250 organisations working together to reduce climate impact in the Stockholm region. The initiative is led by the City of Stockholm with a clear goal – a fossil-free Stockholm by 2040. Through joint commitments, knowledge sharing, and concrete climate actions, we actively contribute to the transition that the future demands.
